Traditional Corn Carrot Lean Soup - Carrot Week

This traditional soup is stereotypically made by the Cantonese for many reasons. Starting with the carrot, there are so many soup recipes that revolve around it due to the carrot's amazing nutritional properties. As mentioned before in our blog post, the carrot is stereotypically great for eyesight but with soups it can also enhance your immune system, reduce risk for ovarian cancer, and even slow down aging. Corn also has great health properties with Traditional Chinese Medicine believing it is natured to be sweet and calming. With this it can nourish your stomach and spleen, and can dehumidify your body. The lean meat pairs up very well with corn as it can also not only strengthen your spleen but your kidneys as well. These ingredients all combined have the amazing ability to nourish and replenish your qi. With salt being incorporated at the end, this is due to its' ability to season but also to cleanse your mouth according to tradition. While all these give nutrition, the rest of the ingredients give it more flavour in general.

We love this recipe because of how easy it is to not just assemble all the ingredients but also cook it. With us showing our recipe later this week for a more complex soup; we want to give you a more simplistic recipe which is traditional and tasty. It is such a sweet and light soup with so many health benefits. Furthermore, it is great to have some sides such as corn and the meat with the actual soup. The corn and carrots make the soup taste so sweet yet unique in its' own way as it is not the stereotypical sweet flavour you get from sugar. Ingredients
-1 Carrot (imperator preferred or a larger one)
-1 Corn
-250 grams of lean pork meat
-1/4 cup of apricot kernels
-2 Candied dates

Recipe
1. Wash and slice the lean pork meat, then rinse it again
2. Peel the carrots, then cut into more manageable pieces
3. Cut the corn into 3 parts (you can eat this after if you like!)
4. Wash the apricot kernels and candied dates
5. Put all the ingredients in boiling water at a high heat for around 30 minutes, then simmer for around an hour and add salt when serving
6. Enjoy!
