Walnut butter cake is such a fun and simplistic way to make a walnut based confectionary. Much like a banana bread, it is great for beginners to try making and comes with a very distinct taste of walnut. You can make it into a loaf which would be the recommended way but today we decided to use a cake pan which in retrospect made it more like a cookie with the amount of ingredients we put in. Despite that the flavour was still A-OK! It has such great nutty flavour and is slightly crispy and soft on the inside. The walnuts sprinkled on top give it a whole different dimension as well as you go from crisp to soft to crunchy. We absolutely love this as an afternoon snack. Not to mention it looks posh as its' colours look like Louis Vuitton! LOL
Walnuts are very healthy with so many benefits especially when consumed in the morning! In some beliefs it nourishes your qi and kidneys while others believe they balance your mental state. It can be considered a superfood as it is great for your weight-loss with aided digestion, reduced risk of cancer, better blood pressure, and even reduced risk of diabetes 2. It is also rich in Omega-3, anti-oxidants, anti-inflammatories and vitamins as well! Without further ado here is our simple recipe for a snack!
Ingredients
-2 teaspoons milk
-120ml Butter -120ml All-Purpose flour -60ml Sugar -1 teaspoon vanilla extract -1 teaspoon baking powder -2 eggs -75ml walnuts (ground/minced) -Walnuts to your liking
Recipe 1. Grease your pan/baking container and preheat your oven to 350F 2. Mix your butter (melted), sugar, vanilla until fluffy and creamy then add eggs slowly one at a time while maintaining the texture 3. In a separate bowl sift/mix flour, baking powder and ground walnuts. Then mix it in with the other mixture 4. Pour the whole mixture into your container/containers and sprinkle whole walnuts over as well 5. Bake for around 20-30 minutes depending on thickness. Make sure with a long stick and no residue comes out
