Carrot-Ginger Sauce with Cod/Fish - Carrot Week

Combining two of our favourite ingredients in carrot and ginger, for a sauce is such an amazing way to try it! Having all these fresh ingredients go with your fish is an astounding way to try this great dish. With the fresh flavour of cod or another fish like a halibut; it pairs perfectly. We love the sweetness of cod, carrots and the saltiness of pecans to go with it all.

This sauce goes well with so many different types of fish and even some other proteins as well. Furthermore, for those who like having some pasta or carbs with it as well; this sauce actually matches somewhat well as well.

Health wise this sauce contains ginger which have so many health benefits such as settling your stomach, anti-inflammatory properties, period pain relief, and even reducing diabetes risk. Ginger can even lower risk of heart disease, cancer, and alleviate pregnancy struggles such as morning sickness. Carrots aid with many skin related problems such as having anti-aging properties, skin health aid, and of course aiding with your eyes a lot. Furthermore, carrots have been linked to lower cholesterol, better digestion, and for all those on weight watch: a weight loss aid. Fish is low fat and filled with omega-3 which helps with better digestion, lower anxiety levels and so much more. Ingredients

-Carrots (Preferably baby)

-Several fillets of cod or another fish

-Salt and pepper

-1 tablespoon Ginger

-2 tablespoon Olive oil

-1 tablespoon Lemon juice

-Unsalted butter

-Fish stock/dashi

Optional:

-Rosemary

-Parsley

-Thyme

-Mint

-Pecans

Recipe (Sauce)

1.Using 3/4 cup of young carrots, ginger, and fish stock. Cook it on a medium heat until your carrots are very tender

2. Season with salt and a hint of pepper then put it in the blender and purée it until it is smooth

3. Slightly melt butter around 3 tablespoons, and slowly incorporate them while blending

4. Read to serve once it is smooth and creamy


Recipe (Fish)- Choose whatever fish! We are using Cod/Halibut as an example

1. Preheat your sous-vide 130F/54C and/or your oven to 400F/204C

2(Sous-vide). Seal your fish in a sous-vide with salt, pepper, and a hint of lemon juice/ or (Oven). Put a baking tray and season your fish with salt, pepper, olive oil, and a hint of lemon juice

3. (Sous-vide) Sous-vide for around 30 minutes/ (Oven) bake for around 10 minutes

4. (Sous-vide) Broil your fish for 2 minutes skin side down/ (Oven) take out for serving

5. Once coming out of the oven, you can get your fish and serve it on top of a shallow pond of sauce or have the sauce drizzled on! Garnish with the herbs, sliced carrots and pecans if wanted
